In the bread machine put the ingredients in this order: milk, salt, sugar, honey, eggs, soft butter, flour and on top not to touch the liquid components, dry yeast. The machine is programmed on the program for kneading and leavening, approx. 1 hour and a half.

After the machine has stopped, the dough is removed on the worktop, which for me is the top of the kitchen cabinet.

The dough will come out slightly soft, but will not stick to your hand. Divide the dough into six pieces. Each piece stretches into a rectangle. Set on the long side and leave to rise for another ten minutes, covered on the worktop with a textile towel.

Line two forms of Yena cake with baking paper, then grease with butter.

Take the pieces of dough and again stretch them into a rectangular shape. Roll and put in the prepared trays.

Cover with a towel and leave to rise for another hour

Meanwhile, heat the oven to 180 degrees Celsius.

When they have grown nicely, the breads are greased with milk and put in the oven.

I always put them close to the middle of the oven for about 30 minutes, after which I move them very high for about 15-20 minutes, to brown nicely on top and not be surprised to burn too badly underneath.

When they are nicely browned, take them out of the oven.

Ingredients Mini bagels with milk

  • 500 g white flour type 550
  • 300-370 ml warm milk
  • 20 g of fresh yeast
  • 2 tablespoons sugar

  • 50 g butter

Preparation Mini bagels with milk

Put the yeast, a tablespoon of sugar in a bowl and stir vigorously until liquefied. Add 3 tablespoons of flour and a little warm milk, until you get a homogeneous composition, creamy consistency.

Let it rise until it doubles in volume.

In a bowl put the rest of the flour, then add the yeast and begin to knead, gradually adding warm milk. Now add the butter that you have previously melted and left to cool.

Add salt and knead everything for 10-15 minutes.

You need to get an elastic, non-sticky dough, nice to work with.

Cover the bowl with a clean napkin and leave it in a warm place for an hour.

Turn the dough over and divide it into 16 equal pieces on the floured work table.

Model each piece in the ball, then flatten it with your fingers, obtaining a circle.

Take, in turn, the edges of the circle, over the middle, one on top of the other and lightly press the end.

Turn the bag with the glued end left underneath.

Do the same with all the dough balls and place them in a large tray, in which you put baking paper.

Cover the pan with mini bagels of milk and leave to rise for another 20 minutes, during which time preheat the oven to 200 degrees.

Insert a tray of water on the lowest step of the oven.

After the 20 minutes have passed, draw lines over the bags, with a thin, very sharp knife (I should have drawn a deeper idea)

Then brush the bagels with milk and insert the tray on the middle step.

Bake for 20-25 minutes or until nicely browned.

After 10 minutes of baking, remove the tray with water from the oven and continue baking the loaves.

Remove the tray from the oven and cover with a thick towel. Leave until they cool well.

Serve for breakfast, with butter, jam, chocolate or at the table, instead of bread.

This recipe that I present to you today is, in fact, for a loaf of bread, enough for you for some great sandwiches or for a family meal. If you want to have 2-3 days, double the quantities.

INGREDIENTS

1 egg yolk and 2 tablespoons of milk to grease

dried greens or seeds, optional.

Directions

  • I put all the ingredients in the pan of the bread machine, first the liquids, then the solids, and the yeast in the dedicated compartment, I let it knead, then I transferred the dough in a bowl greased with oil and let it rise, at the temperature room, about 45 minutes, covered with cling film. You can knead the dough manually, if you do not have a food processor or a bread machine, about 15-20 minutes.
  • After 45 minutes, I took the foil off the dough and transferred it to the worktop. The dough is very nice, it is very easy to shape.
  • I divided the dough into 3 approximately equal balls. If you want them to be perfect, I recommend you weigh them.
  • I took each piece of dough and spread it out as in the photo:

  • Then I formed a roll:
  • I did the same with the rest of the pieces, then I put the rolls in a cake pan, lined with baking paper and let rise at room temperature for about 25 minutes.
  • Before putting the bread in the oven, I greased it with egg yolk mixed with milk and sprinkled sesame seeds on top. You can sprinkle greens, salt or any other kind of seed, as you like.
  • I put it in the preheated oven, at 180 degrees, for 45-50 minutes, until it browned nicely. In the oven, under the bread pan, I had a bowl of water so that the crust did not harden excessively, but remained crispy.

So, it is not at all difficult to make bread at home, from selected and controlled ingredients. I guarantee you: the recipe is a sure success!
